Rutabaga roasted in the oven

1 large rutabaga

Method 

Preheat the oven to 220°C (425°F).
Peel the rutabaga with a knife and trim off the top and bottom parts of the root, then slice it into 1 cm thick slices, and cut these into chunks.
Toss the rutabaga pieces with olive oil in a bowl.
Spread the pieces out on a baking sheet lined with parchment paper, and season with salt and pepper. Roast in the oven for about 40 minutes, remembering to turn the pieces occasionally to ensure even coloring. When the pieces are nicely colored, they’re ready to eat.


Garnish the roasted rutabaga with finely chopped parsley (or other herbs) before serving.
